Table For Two Menu

07/22/2010

Last night we catered “wasan table for two menu” at Japan Society.

Thank you for all the attendance and Japan Society’s staff.

Here were our “Table for two” menu.

“Special tofu salad with Natto dressing”

Since we focus on vegetable, we didn’t any meat.

But some people won’t be enough, so we use avocado instead of meat.

Many people ask what kind of dressing we made.

That was Natto dressing mixed with white balsamic.

The red small pieces are beets.

“Eggplant with garlic sauce”

Now is the season for eggplant.

These days it’s been hot day. So chef consider some people may lose their appetite.

Then he creates garlic sauce and sautée eggplant with it.

“Simmered pumpkin in wasan style “

We used a lot of pumpkins. Of course it’s not a same size, so he changed the quantity of water depend on pumpkin’s quality.

He also control of flavoring of seasoning depends on humidity.

His cooking was perfect. Not too soft, not too hard. Even though he cooked 2 hours, the shape still remains.(see picture)

“Assorted vegetable rolls”

We made:

Yum & Shiso Roll

Okura Roll

Pumpkin Roll

Mushroom Roll

Tomato & Lettuce Roll

and more.

Wednesday, July 21, 6:30 PM — 8 PM

What if you could do something good for yourself and do something even better for someone else with the effortless of choice of what to eat? That is the simple but powerful logic behind Table for Two (TFT), a Tokyo-based nonprofit. TFT earns ¥20 for every healthy, TFT-designated meal sold in over 250 corporate cafeterias, restaurants, and convenience stores in Japan, which in turn is spent to subsidize nutritious lunches for school-aged children in Africa. TFT is expanding to the U.S. beginning with Columbia University and the Kitano Hotel in New York. Masa Kogure, Director of TFT International, speaks about TFT’s dual mission to fight hunger and malnutrition in developing countries and obesity and diabetes in Japan and U.S.

Moderated by Dan Chapman, Managing Director, Loan Syndicate and Sales, U.S. Bank.

Followed by a reception with TFT-inspired gourmet dishes catered by Wasan.
