Hakkaisan Sake Tasting and Virtual Brewery Tour

We had a great time yesterday. We served food at Hakkaisan sake tasting.

The host was sake samurai, Timothy Sullivan. He explained Hakkaisan with 3D video.

First we served welcome snack.

Fried tomato with guacamole sauce. Yellow paprika and fried ginger on top.






Second plates:

(front: Hanger steak marinated with miso and shredded mixed greens)

(back: Steamed chicken with almond sauce. Wolf berry on top)

Usually steamed chicken comes with sesame sauce, but chef Sakurai arranged rich almond sauce instead of sesame sauce.




Chef Kitagawa cuts hanger steak marinated with miso.

It looks raw, but it is firmly cooked in the center of beef.




Third plates:

(front left: Bara chirashi with smoked salmon)

(back left: crunchy soba noodles with fresh sautéed lettuce)

(front right: Grilled fluke soaked in a bonito broth)

In the grilled fluke plate, chef Sakurai made red paprika swallow shaped. And he made sesame rice cake with miso inside. He found gherkin(green round one) in the market to gave an accent on dishes.

Hakkaisan Sake Tasting and Virtual Brewery Tour!

Our friend sake samurai, Timothuy sullivan will have a “Hakkaisan” seminar tomorrow.
Wasan creates foods which go with Hakkaisan.




Here is the list Hakkaisan(generally) goes with:

Seasoning – butter, heavy cream and natural salt
meat – Chicken
fish – fluke, stripe bass
Other – Almond, pine nuts, cashew nuts


Then our chef creat the menu:

  • Fried tomato chips with guacamole sauce. Fried ginger on top
  • Hanger steak marinated with rich miso & green salad
  • Steamed chicken with almond sauce
  • Grilled fluke soaked in a dashi broth
  • Sautéed fresh lettuce
  • Bara-chirashi(assortment vegetable chirashi. Home-made smoked salmon skin on top of it)
